West Virginia Meat Loaf
West Virginia Meat Loaf is an moderately easy dinner. Made with 1 1/2 lb. ground beef, 1/4 c. finely chopped onion, 1/4 c. finely chopped green pepper, 1/2 c. chopped dill pickles and 1/4 tsp. black pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 350°. Mix meat well with next 5 ingredients.
Soak bread in milk.
Add eggs and beat with fork.
Combine meat and egg mixtures.
Form into 2 loaves and roll in dried bread crumbs.
Place in shallow baking pan.
Completely cover tops of loaves with ketchup.
Pour 1/2 cup boiling water around loaves.
Bake, uncovered, at 350° for 1 hour.
Serves 8 to 10 people.
