Watermelon Rind Preserves
Watermelon Rind Preserves is an easy dinner. Made with 6 c. cubed watermelon rind, 1 lemon, 2 c. sugar, 1/2 c. fruit pectin and few drops red food coloring, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Clean rind by removing red meat and green outer part of rind. Cut rind and lemon into small pieces.
Mix fruit and sugar; let set overnight.
Cook mixture for about 1 hour, until thickened. Remove mixture from heat.
Add 1/2 cup pectin and enough food coloring to give an attractive color.
Seal preserves in jars.
