Watermelon Rind Pickles

Peel rind and remove all pink.
Cut in 1-inch squares.
Soak 3 hours in salt and water.
Rinse and drain and cook in enough water to cover until just tender.
Make syrup of sugar, vinegar, water, lemon and cinnamon.
Add rind and simmer until it looks clear. Pack in hot, sterile jars and seal.
Makes 6 to 8 quarts.
