Watercress Soup
Watercress Soup is an moderately easy dinner. Made with 1 tbsp. butter, 1/3 c. sliced green onions and tops, 1/4 c. sliced celery, 1 (13 3/4 oz.) can chicken broth and 1/2 c. snipped watercress, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Melt butter, cook and stir onions and celery in butter until onions are tender.
Stir in chicken broth.
Heat to boiling. Reduce heat.
Simmer until celery is tender, about 5 minutes. Stir in watercress and potato flakes.
Heat just until watercress is wilted, about 2 minutes.
Remove from heat; cool slightly. Pour watercress mixture in blender and blend until smooth.
Stir in pepper and cream.
Heat until boiling.
Serve hot or cold.
