Warm Potato Salad
Warm Potato Salad is an moderately easy dinner. Made with 1 1/4 lb. potatoes (3 medium-large), cooked, cooled, peeled and cut into 1-inch chunks, 1/3 c. sliced green onions, 4 slices bacon, 1/2 c. thinly sliced celery and 1/2 c. thin strips green or red bell pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Put potatoes and green onions into a large bowl.
Cook bacon in a large skillet over medium-low heat until crisp.
Remove to paper towel to drain.
Pour off all but 1 tablespoon drippings.
Add celery and bell pepper.
Cook over medium heat about 2 minutes until crisp-tender.
Add to potatoes.
Pour vinegar into skillet. Add salt and pepper.
Cook over medium heat until hot.
Pour over potato mixture.
Toss to mix well.
Crumble bacon over top.
Makes 4 servings.
