Vidalia Onion Pie
Vidalia Onion Pie is an moderately easy dinner. Made with 3 medium vidalia onions (sweet), 2 tbsp. butter, 1/2 lb. sharp cheddar cheese, grated, 3 eggs, beaten and 1 1/2 c. scalded milk, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Crumble saltines and combine with softened butter.
Press onto the bottom of a glass baking dish (a square one is good).
Saute the onions (peeled and sliced) in 2 tablespoons butter until golden, but not brown.
Put the onion mixture on top of the saltine crust.
Spread the grated cheese over this mixture.
Mix the custard in a bowl (milk, eggs, salt and pepper). Pour over the top of the casserole and bake at 350Β° for 25 minutes. Bake until golden.
Keeps well. Freezes well, too!
