Vera Cruz Tomatoes
Vera Cruz Tomatoes is an moderately easy dinner. Made with 3 strips bacon, 1/4 c. chopped onion, 8 oz. fresh spinach, snipped, 1/2 c. sour cream and dash of bottled hot pepper sauce, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook bacon until crisp.
Drain, reserving 2 tablespoons of drippings.
Crumble bacon and set aside.
Cook onion in reserved drippings until it is tender.
Stir in spinach.
Cook, covered, until tender, 3 to 5 minutes.
Remove from heat.
Stir in sour cream, onion and pepper sauce.
Cut tops from tomatoes.
Remove centers, leaving skins.
Fill with spinach mixture.
Place in baking dish.
Bake at 375Β° for 20 to 25 minutes.
Top with shredded cheese and bake 2 to 3 minutes more.
