Veggie Pasta
Veggie Pasta is an moderately easy dinner. Made with minced garlic, parmesan cheese, mushrooms (fresh wash bite size pieces; optional), broccoli (fresh wash bite size pieces; optional) and carrots (fresh wash bite size pieces; optional), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Put veggies in large skillet with a very small amount of olive oil (1 tablespoon).
Cook on medium heat (covered) until veggies are tender, about 10 minutes.
Add 2 or 3 tablespoons of basil pesto; add tomatoes and cook on medium for about 8 minutes.
Add 1/2 tablespoon minced garlic.
Add whipping cream and cook on medium heat just long enough to get the cream hot.
Serve over any kind of pasta.
