Vegetable Medley Quiche
Vegetable Medley Quiche is an moderately easy dinner. Made with 1 tbsp. margarine, 1 small zucchini, sliced, 1 small green pepper, cut in strips, 1 small red pepper, cut in strips and flaky pastry crust, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In medium skillet, over medium heat, melt margarine.
Add zucchini and peppers.
Cook, stirring occasionally, until tender-crisp.
Spoon mixture into unbaked pie crust.
Mix Egg Beaters, skim milk and seasonings.
Pour over filling in crust. Bake in preheated 375Β° oven for 50 to 55 minutes or until knife comes out clean when inserted into middle of filling.
Let stand 10 minutes.
Makes 8 servings.
