Vegetable Medley
Vegetable Medley is an moderately easy dinner. Made with 2 c. fresh broccoli, 2 c. fresh cauliflower, 1 c. sliced carrots, 10 to 15 cherry tomatoes and 1 c. fresh mushrooms, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut vegetables in bite-size pieces. Place all vegetables, except avocados, in a large mixing or storage bowl. Cover vegetables with Italian dressing and refrigerate for at least 4 to 8 hours (can make in the morning to serve at dinner).
Stir vegetables to mix dressing. Place in serving bowl and add bite-sized pieces of avocado and serve.
