Vegetable Casserole
Vegetable Casserole is an moderately easy dinner. Made with 2 cans mixed vegetables (i prefer del monte), 1 can sliced water chestnuts, 1 medium onion, chopped, 1 c. shredded cheese (i use sharp) and 1 c. mayonnaise, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Melt margarine and mix with stuffing.
Set aside.
Drain vegetables and chestnuts, reserving liquid.
Mix vegetables, chestnuts, onion, mayonnaise and cheese.
Add liquid as needed, approximately 1/2 cup.
Pour in a 13 x 9-inch casserole dish. Cover with stuffing.
Bake at 350Β° until brown, about 30 minutes.
