Valerie's Cordon Bleu Chicken
Valerie'S Cordon Bleu Chicken is an impressive dinner. Made with 2 to 2 1/2 lb. cut up fryer or chicken breasts, 3 tbsp. butter, 1/4 c. flour, 2 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat butter in skillet.
Mix flour, salt, pepper and thyme in a paper bag.
Shake chicken pieces in bag.
Brown chicken thoroughly in skillet.
Add onions and mushrooms.
Cover and simmer 5 minutes.
Mix lemon juice, sugar, salt, wine and pour over chicken.
Cover and simmer 5 minutes.
Add tomatoes and cook slowly over low heat 1/2 hour or until chicken is fork-tender. Sprinkle with parsley and chives.
Serve hot.
