Turkey Rice Soup
Turkey Rice Soup is an impressive dinner. Made with 1/2 c. margarine, 1 large onion, diced, 1/2 green pepper, diced, 1 1/2 ribs celery, diced and 1 c. chopped fresh mushrooms, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt butter in large kettle over medium heat. Saute onion, pepper, celery and mushrooms until tender-crisp.
Stir in flour. Do not brown.
Slowly add broth.
Cook and stir over medium heat until thickened.
Cook 1 minute longer.
Stir in rice and half and half.
Heat to serving temperature. Blend in salt, pepper and vermouth.
(Good way to use up last of Thanksgiving turkey.)
I boil up all the bones and make my broth, plus the meat.
