Oil the inside of the sack and the turkey.

Salt and pepper.

Preheat oven to 325Β°. Slip turkey into sack and tie the top securely.

Be sure there is no hole in the sack.

Place turkey on a rack in a large pan.

Bake according to this time table: 12 pounds or under for 20 to 22 minutes per pound; 12 pounds or over for 16 to 18 minutes per pound.
