Turkey Cassoulet
Turkey Cassoulet is an moderately easy dinner. Made with 1/2 to 2 lb. cooked turkey, cut into 2-inch cubes, 1 medium onion, chopped, 2 tbsp. butter, 1 c. turkey or chicken broth and 1 bay leaf, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large saute pan, cook onion in butter until soft and translucent.
Add broth, bay leaf, salt and thyme.
Drain and discard liquid from beans and add beans to pan.
Stir in tomato paste and mix well.
Add turkey cubes and smoked sausage pieces. Turn into a 2 1/4 to 2 1/2 quart stove-to-table casserole dish. Cover and bake in 350Β° preheated oven for 20 minutes.
Uncover and bake for an additional 10 to 15 minutes until hot and bubbly. Serve with a crusty French bread and an assortment of cheese and fresh fruit.
