Turkey and Wild Rice Soup
Turkey And Wild Rice Soup is an moderately easy dinner. Made with 2 tbsp. butter or margarine, 1 medium onion, chopped, 4 oz. mushrooms, sliced, 2 1/3 c. water and 2 c. chicken broth, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Melt butter in a large saucepan over medium heat.
Add onion and mushrooms.
Cook 2 minutes, until onion is translucent.
Add water and broth.
Stir in rice mix and seasoning packet; bring to a boil.
Reduce heat, cover and simmer for 20 to 25 minutes, until rice is tender.
Add sherry and boil for 1 minute, then add turkey.
Reduce heat to low.
Mix cream and egg yolk.
Stir in a few spoonfuls of soup.
Add mixture to soup in saucepan in a slow, steady stream, stirring constantly.
Cook only until slightly thickened and hot; do not boil!
