Tortellini Soup
Tortellini Soup is an moderately easy dinner. Made with 2 (14 oz.) cans chicken broth, 1 1/2 c. water, 1 lb. thinly sliced mushrooms, 1 celery stalk and 1 large zucchini, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Slice celery very thin, cut zucchini into matchsticks, dice tomatoes and slice mushrooms.
Simmer broth, water, mushrooms, celery, thyme and pepper (10 to 15 minutes).
Add pasta and zucchini; cook, uncovered, on medium heat (6 to 7 minutes).
Add tomato, parsley and salt.
Cook 2 to 3 minutes more.
