Tomato-Onion-Zucchini Casserole
Tomato-Onion-Zucchini Casserole is an moderately easy dinner. Made with 2 or 3 zucchini, 1 large onion, 6 tbsp. butter, 1/4 tsp. oregano and bread crumbs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Scrub zucchini and slice 1/4-inch thick.
Peel and quarter tomatoes.
Peel and slice onions.
Saute zucchini and onion in butter until wilted, then add tomatoes and saute about 2 minutes more.
Add seasoning and transfer all into buttered casserole. Cover with bread crumbs and dot with butter.
Bake at 350Β° for about 1 hour.
Serves 6 to 8.
