Tomato Filled Squash
Tomato Filled Squash is an moderately easy dinner. Made with 8 medium yellow squash, 1 large red or green pepper, 3 tomatoes, diced, 2 medium onions, diced and 3 slices bacon, chopped (does best when slightly frozen), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Steam squash until tender (not overdone).
Cut in half lengthwise.
Scoop out seeds.
Combine remaining ingredients except bread crumbs and butter.
Spoon mixture into squash.
Top with bread crumbs, which have been slightly browned in butter. Bake at 400Β° for 20 minutes or until done.
