Tomato-Feta Frittata
Tomato-Feta Frittata is an moderately easy dinner. Made with 7 eggs, 1/2 c. water, 1 c. cooked white rice, 3/4 c. crumbled feta cheese and 1/2 c. shredded cheddar cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 400Β°.
Heat greased oven-safe skillet in oven for about 5 minutes.
Beat eggs with water.
Add rice, cheeses, picante sauce, cilantro and oregano.
Pour mixture into prepared skillet.
Top with tomatoes.
Bake for 40 minutes or until knife inserted in center comes out clean.
