Tomato Casserole
Tomato Casserole is an moderately easy dinner. Made with 4 c. canned tomatoes or fresh tomatoes with skins and seeds removed, 1 medium onion, cut fine, 1 1/2 c. brown sugar, 1/4 tsp. salt and 3 c. toasted bread crumbs (5 to 6 slices), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil tomatoes, onion, brown sugar and salt for 10 minutes. Toss bread crumbs in melted butter.
Combine tomatoes and most of bread crumbs.
Put remaining bread crumbs on top.
Garnish with parsley and bake in covered casserole for 30 minutes.
Bake at 325Β°.
