Tomato Casserole
Tomato Casserole is an moderately easy dinner. Made with saltine crackers, 2 (16 oz.) cans tomatoes, 8 oz. shredded cheddar cheese, 1 c. chopped onion and 1/2 stick margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Butter a 10 x 10 x 2-inch casserole dish.
Place layer of saltine crackers in bottom of dish.
Pour one can of tomatoes over crackers (chop tomatoes into pieces).
Sprinkle 1/2 cup onions over tomatoes.
Sprinkle 1/2 cheese over onions.
Repeat layers, ending with crumbled crackers on top.
Dot with margarine.
Bake in a 350Β° oven for 30 to 35 minutes, or until golden brown and bubbly in center.
Serve with meat.
Especially good with fish.
