Tomato Aspic Salad
Tomato Aspic Salad is an moderately easy dinner. Made with 1 c. tomato juice, 1 (3 oz.) pkg. lemon flavored gelatin, 1/2 c. water, 3/4 c. finely chopped celery and 1/4 c. finely chopped onion, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Bring tomato juice to boil in a small saucepan.
Remove from heat.
Add gelatin, stirring 2 minutes or until gelatin dissolves. Cover and chill until the consistency of unbeaten egg white. Stir in water, celery and onion.
Pour mixture into a lightly oiled 3 cup mold; cover with aluminum and chill until firm. Unmold onto a plate lined with lettuce.
