Tofu Spinach Lasagna
Tofu Spinach Lasagna is an moderately easy dinner. Made with 1/2 lb. lasagna noodles, 2 (10 oz.) pkg. frozen chopped spinach, 1 lb. soft tofu, 1 lb. firm tofu and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 350Β°.
Use 9 x 13-inch pan.
Defrost spinach and drain.
Place tofu, sugar, garlic powder, lemon juice and 1 teaspoon salt.
Blend until smooth.
Taste, add more salt, if necessary.
Cover bottom of pan with sauce.
Layer noodles, 1/2 tofu filling and 1/2 spinach.
Repeat layering, ending with noodles.
Cover with sauce.
Bake 25 to 30 minutes.
Serves 6 to 8.
