Tex-Mex Deviled Eggs
Tex-Mex Deviled Eggs is an moderately easy dinner. Made with 6 hard-cooked eggs, peeled, 1 tbsp. finely chopped green onions, 1 tbsp. chopped fresh cilantro or parsley, 1 small serrano or jalapeño pepper, seeded and finely chopped and 1/4 c. mayonnaise or salad dressing, this recipe delivers authentic, satisfying flavors. Cut the tips off both ends of each egg to create a flat surface for the eggs to stand on.
Slice each egg in half crosswise. Remove yolks.
Place in small bowl and mash.
Add green onions, cilantro, Serrano or jalapeño pepper, mayonnaise and mustard. Blend well.
Spoon about 1 tablespoon yolk mixture into each egg half.
Top with cheese.
Sprinkle with chili powder.
Cover and store in refrigerator.
