Tapioca Pudding
Tapioca Pudding is an moderately easy dinner. Made with 2 c. skim milk, 2 tbsp. quick cooking tapioca, artificial sweetener to equal 5 tbsp. sugar, 1/4 tsp. salt and 2 slightly beaten eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine milk, tapioca and sweetener and salt.
Let stand 5 minutes.
Add 2 slightly beaten egg yolks.
Bring to a boil over medium heat, stirring constantly.
Remove from heat (mixture will be thin).
Add vanilla. Beat 2 egg whites to stiff peaks. Gradually fold in hot mixture. Chill.
Serves 8.
