Swiss Steak
Swiss Steak is an moderately easy dinner. Made with 3 lb. swiss steak, salt and pepper to taste, 1 c. strong coffee, 1 c. (4 oz.) mushroom pieces (undrained) and 1/2 medium onion, diced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Dredge meat (both sides) with flour, salt and pepper.
Melt about 4 tablespoons shortening in Dutch oven.
Brown meat on both sides.
Remove meat from pan.
Add 3 to 4 tablespoons flour; mix well.
Add more shortening if need be to make a thin paste.
Add 3 to 4 cups cool water and coffee.
Stir until begins to thicken; add onion, mushrooms and garlic.
Should have a fairly thin gravy.
Add meat; cover and place in a 350Β° oven.
Bake for 3 to 3 1/2 hours until done.
