Swiss Chard
Swiss Chard is an moderately easy dinner. Made with swiss chard for four, 4 or more slices bacon, 1/3 c. vinegar, 2 eggs and 2 tbsp. milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Wash chard; slit lengthwise and chop.
Bring a pan of water to a boil; cook chard; drain.
Fry bacon; reserve 2 Tbsp. fat. Crumble bacon, set aside.
Dice onion; set aside.
Beat eggs with 2 Tbsp. milk.
Weaken vinegar with water to make 1/2 C. Add to egg mixture and cook till thickened.
Add chard, crumbled bacon, and raw onion.
Serve at once.
