Sweet Red Pepper Marmalade
Sweet Red Pepper Marmalade is an easy dinner. Made with 2 doz. large, sweet red peppers, 2 1/2 c. vinegar, 5 c. sugar and 2 tbsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Remove seeds from peppers.
Finely chop peppers in blender. Put in colander and add salt.
Let drain for 1 hour.
Boil sugar, vinegar and water for 5 minutes.
Add peppers; cook slowly until thickened, about 1 1/2 hours.
Pour, while hot, into jelly jars and seal immediately with hot, melted paraffin.
Spread over cream cheese and serve on crackers.
