Sweet Potatoes and Bananas
Sweet Potatoes And Bananas is an moderately easy dinner. Made with 3 large sweet potatoes, peeled, 2 bananas, 1 tbsp. lemon juice, 1/4 c. brown sugar, packed and 1/2 tsp. ground nutmeg, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Peel potatoes and cut into 1-inch slices.
Place in pot, cover with water and bring to a boil.
Reduce heat and cook 15 to 20 minutes or until tender.
Drain.
Peel bananas and cut into chunks.
Toss with lemon juice to prevent discoloration.
Place potatoes and bananas in a shallow roasting pan. Sprinkle with brown sugar, nutmeg and salt.
Drizzle with rum and melted butter. Cover with aluminum foil and bake at 375° for 30 minutes.
Remove from oven and mash or purée potatoes, bananas and all of the liquid.
Pour mixture into a casserole dish; cover with aluminum foil and warm in a 350° oven for 15 to 20 minutes.
Serves 5 or 6.
