Sweet Potato Soufflé
Sweet Potato Soufflé is an moderately easy dinner. Made with 3 lb. sweet potatoes, peeled and cut into cubes, 2 large eggs, 3/4 c. firmly packed brown sugar, divided, 1/2 c. butter, melted and divided and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Cook potatoes until soft; in large bowl, beat potatoes with mixer until smooth.
Beat in eggs, 1/4 cup brown sugar, 1/4 cup of butter, salt and cinnamon.
Beat in orange juice slowly to make mixture fluffy.
Put mixture into 2 to 3-quart soufflé dish and smooth top.
Arrange pecans over top; sprinkle remaining 1/2 cup brown sugar over pecans.
Drizzle remaining 1/4 cup butter over sugar.
Bake at 375° for 25 to 30 minutes until top is bubbly.
