Sweet Potato Soufflé
Sweet Potato Soufflé is an easy dinner. Made with 2 cans bruce's yams, 1 small can crushed pineapple, 1 1/2 c. raisins and 1 bag large marshmallows, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Drain pineapple well and reserve juice.
Soak raisins in juice (for best results, soak overnight).
Drain yams; mash yams until all lumps are removed.
Mix raisins, yams and pineapple thoroughly and put mixture into a 2-quart casserole dish.
Cover with marshmallows, standing on edge to form a complete covering so none of mixture is visible.
Bake at 350°, uncovered, for 20 to 30 minutes or until marshmallows are golden brown.
Serves 6 to 8.
