Sweet Potato Pie(Makes 1 Pie) is an moderately easy dinner. Made with 2 c. sweet potatoes, cooked and mashed, 1 stick margarine, 1 1/4 c. sugar, 1 egg and 1/4 c. milk, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Peel potatoes; slice fairly thin, cover with water and cook until tender.
Measure (press fairly firm) and place in a large mixing bowl.
On low speed, whip well (clean beaters).
Add butter while potatoes are warm, then add sugar, egg, milk and vanilla; mix well.
Add coconut and stir in well.
Pour into unbaked (deep dish) pie shell.
Bake in a moderate oven (350Β°) until filling is set and begins to brown.
