Sweet Potato Pie
Sweet Potato Pie is an moderately easy dinner. Made with 1 deep dish pie shell, 2 large (1 to 1 1/2 lb.) sweet potatoes, cooked and peeled, 1/4 c. butter, softened, 1 c. sugar and 2 eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven and baking sheet to 375Β°.
Beat sweet potatoes until smooth.
Mix in butter and sugar.
Beat in eggs, one at a time.
Mix in nutmeg, salt and evaporated milk.
Pour filling into pie crust and put on baking sheet.
Bake for 60 to 65 minutes. Cool before serving.
May be served with Cool Whip.
