Sweet Potato Pie
Sweet Potato Pie is an moderately easy dinner. Made with 3 medium sweet potatoes, 1 (9-inch) pie shell, 3/4 c. butter, melted, 4 eggs and 3/4 c. evaporated milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash and bake sweet potatoes until almost fork-tender (about 45 to 50 minutes).
Scoop potatoes out of skins and mash, there should be about 2 cups.
