Sweet Potato Muffins
Sweet Potato Muffins is an impressive dinner. Made with 1/2 c. butter, 1/2 c. sugar, 1/2 c. brown sugar, 2 eggs and 1 1/4 c. sweet potatoes, mashed (can use frozen or canned), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Grease muffin tins.
Cream butter and sugars.
Add eggs and mix well.
Blend in sweet potatoes.
Stir flour with baking powder, salt, cinnamon and nutmeg.
Add flour mixture to sweet potatoes alternately with milk.
Do not overmix.
Fold in nuts and raisins.
Fill tins 2/3 full.
Bake at 400Β° for 25 minutes. Yields 2 to 3 dozen muffins.
Excellent compliment with a country ham dinner!
