Sweet Potato Casserole
Sweet Potato Casserole is an moderately easy dinner. Made with 6 medium sweet potatoes, 1 c. liquid, 1 c. light brown sugar, 1 tbsp. cornstarch and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Parboil the sweet potatoes and reserve 1 cup of the liquid. Combine the liquid with the sugar, salt, cornstarch, butter and vanilla.
Bring to boil for 5 minutes.
Remove from heat.
Line a baking dish with the cooked, peeled and sliced sweet potatoes and pour liquid mixture over them.
Bake at 375Β° for 20 minutes or until hot.
