Sweet and Sour Pork
Sweet And Sour Pork is an impressive dinner. Made with 1 (20 oz.) can unsweetened pineapple chunks, undrained, vegetable cooking spray, 1 1/2 lb. lean boneless pork, cut into 1-inch cubes, 1/2 c. chicken broth and 1/4 c. vinegar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Drain pineapple; save juice.
Set aside.
Coat large skillet with cooking spray.
Place over medium heat until hot.
Add pork. Cook until brown on all sides.
Remove pork and drain on paper towels.
Wipe skillet dry.
Return pork to skillet; stir in pineapple juice, broth, vinegar, sugar, soy sauce and ginger. Bring to a boil.
Cover; reduce heat and simmer 20 to 25 minutes until pork is tender.
Add pineapple, green pepper and onion. Simmer 4 to 5 minutes until vegetables are tender.
Mix cornstarch and water; pour over pork mixture.
Stir until bubbly.
Serve over rice.
