Sweet And Sour Meatball Salad is an impressive dinner. Made with sesame oven meatballs (recipe follows), 1 small green pepper, seeded and cut into 1/2-inch wide strips, 2 medium-size carrots, cut diagonally into 1/8-inch thick slices, 2 medium-size stalks celery, cut diagonally into 1/4-inch thick slices and 1 (8 oz.) can water chestnuts, drained and thinly sliced, this recipe delivers authentic, satisfying flavors. Prepare Sesame Oven Meatballs as directed.
In a large bowl, combine meatballs, green pepper, carrots, celery, water chestnuts and pineapple; set aside.
In a small pan, combine cornstarch, brown sugar, ginger, red pepper (if desired), soy, vinegar and broth; mix until smooth.
Place over high heat and cook, stirring, until sauce boils and thickens.
Pour over meatball mixture and stir gently to coat evenly.
Divide lettuce evenly among 4 to 6 dinner plates.
Top lettuce with noodles; then spoon meatball mixture evenly over each serving.
