Summer Vegetables
Summer Vegetables is an moderately easy dinner. Made with 1/2 c. chopped onion, 1/2 c. chopped green pepper, 2 tbsp. margarine, 2 c. diced fresh tomatoes and 2 c. zucchini, sliced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In a saucepan, cook onion and pepper in margarine until limp. Add tomatoes, zucchini, corn, salt, sugar and pepper.
Heat until vegetables are tender.
Combine flour and milk until smooth.
Stir into hot mixture.
Boil and stir 1 minute.
Pour into a baking dish and top with French fried onion rings.
Brown briefly under the broiler.
