Summer Vegetable Medley
Summer Vegetable Medley is an moderately easy dinner. Made with 1 large onion, chopped, 1 c. uncooked rice, 4 tomatoes, peeled and chopped, 1 1/2 c. beef consomme and 1 eggplant, peeled and cubed, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Oil a covered casserole large enough to hold mixture.
Combine rice and vegetables in casserole.
Pour consomme over mixture. Cover casserole.
Put in oven and bake at 350Β° for 45 minutes. Remove casserole from oven.
Stir gently and return to oven, uncovered, for about 15 minutes or until liquid is absorbed.
