Summer Squash Casserole
Summer Squash Casserole is an moderately easy dinner. Made with 8 medium zucchini or yellow squash, paprika, 1/2 c. butter, 1 c. cheddar cheese and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Slice squash. Steam or boil for several minutes.
Heat butter, cheese, sour cream, salt, pepper, egg yolk, paprika and chives until these blend and make a sauce.
Pour over squash. Sprinkle bread crumbs over top.
Coat with Parmesan cheese and dot with butter.
Bake for approximately 45 minutes at 350Β°.
Serves 8.
