Summer Squash Casserole
Summer Squash Casserole is an impressive dinner. Made with 2 lb. yellow squash, 1/2 c. margarine, 1/2 c. chopped onion, 1/2 c. chopped green pepper and 2 well beaten eggs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook sliced squash in salted water until done.
Drain and mash.
Mix crackers, egg, milk and part of the cheese into the squash.
Pepper to taste.
Pour into casserole.
Slice more of the cheese and place on top.
Bake at 350Β° about 25 minutes.
