Stuffed Zucchini Squash
Stuffed Zucchini Squash is an moderately easy dinner. Made with 6 medium zucchini, 3 c. soft bread crumbs, 1/2 c. parmesan cheese, 1 small onion and 3 tbsp. minced parsley, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Wash zucchini; cut off ends.
Cook in boiling water (salted) for 5 minutes.
Halve lengthwise; remove pulp with spoon.
Combine pulp with bread crumbs, cheese, onion, parsley, salt, pepper and eggs.
Fill zucchini shells.
Dot with butter.
Sprinkle with more cheese.
Bake in moderate oven (350Β°) for 30 minutes.
