Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 3 large zucchini, 2 tbsp. chopped onion, 1/4 c. sour cream, 1/4 c. sliced mushrooms and 1/4 c. dry bread crumbs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°.
Cook zucchini in boiling salted water for 10 minutes.
Drain.
Cover with cold water; let stand until cool enough to handle.
Carefully scoop out and save pulp, leaving 1/4-inch shell of zucchini.
Chop pulp; combine with remaining ingredients.
Spoon mixture into zucchini shells.
Place in lightly greased shallow baking dish.
Bake, uncovered, for 25 to 30 minutes, or until tender.
