Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 4 to 5 medium zucchini, 1 1/2 lb. lean ground beef, 1 1/2 c. soft bread crumbs, 1 tbsp. minced fresh parsley and 1/4 c. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Wash and trim the ends of the zucchini. Cut in half lengthwise and scoop out pulp. Finely chop pulp.
In a mixing bowl, combine pulp, ground beef, bread crumbs, parsley, Parmesan cheese, onion and egg. Add seasonings.
Fill zucchini shells with meat mixture. Place in a 13 x 9 x 2-inch baking dish. Combine tomato soup and water.
Pour over zucchini. Bake at 350Β° for 45 to 50 minutes. Yields 8 to 10 servings.
