Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 2 medium zucchini, 1 tbsp. oil, 1/2 tsp. basil, crushed, 1/2 c. milk and 1/3 c. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cut squash in half lengthwise.
Place cut side down in dish in microwave.
Microwave on High, covered, 2 to 3 minutes or cook in boiling water 3 to 4 minutes.
Scoop out pulp, leaving a quarter-inch shell; set aside.
Cook onion in hot oil until tender. Add chopped zucchini and cook 1 minute.
Stir in flour, basil and pepper.
Cook and stir one more minute.
Gradually add zucchini to egg, stir in Parmesan.
Spoon mixture into shells.
Bake in square baking dish, uncovered, at 350Β° for 25 to 30 minutes or until brown.
