Stuffed Sweet Potatoes
Stuffed Sweet Potatoes is an moderately easy dinner. Made with 4 sweet potatoes, 8 strips bacon, diced, 1 cup diced onion, 1/2 cup sour cream and 2 tbsp. butter, softened, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash and bake sweet potatoes at 375 degree oven for 50 minutes or until tender.
Let potatoes cool.
While potatoes are baking dice and brown bacon.
When bacon is brown, add onions and cook tender.
Remove to strainer and strain bacon grease.
Press mixture gently.
Lay potatoes on side.
Slice 1/2 inch off top. Remove pulp from top and inside potato, leaving 1/4 inch thick wall.
Combine pulp, sour cream and butter.
Mash with potato masher.
Add bacon, onion, salt and nutmeg.
Stuff potato. Sprinkle with pecans.
Heat oven to 350 degrees.
Bake 20 - 25 minutes.
