Stuffed Pita Scramble
Stuffed Pita Scramble is an moderately easy dinner. Made with 1 tbsp. margarine, 2 c. sliced zucchini, 1/3 c. chopped onion, 1 large can cooked chicken breasts, drained and 4 eggs, beaten, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In a large nonstick skillet, heat margarine over medium heat until bubbly; add zucchini and onion and saute, stirring constantly, until zucchini is tender, 2 to 3 minutes.
Add chicken and cook, stirring constantly until heated through, about 1 minute.
Add eggs and cook, stirring frequently, just until eggs are set, 1 to 2 minutes.
Stir in cheese and cook until cheese melts.
Cut pita in half crosswise, forming 2 pockets.
Stuff each pocket with 1/8 of the egg mixture and 1 tomato slice.
Makes 4 servings.
