Stuffed Peppers
Stuffed Peppers is an moderately easy dinner. Made with 4 large peppers, 12 oz. ground turkey, 1 c. finely chopped onions, 1 tsp. dried oregano and 1 1/2 c. cooked rice, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cut peppers in half lengthwise.
Remove seeds, blanch in boiling water for 3 minutes.
Drain.
Brown turkey, onions and oregano.
Stir in rice, Parmesan, eggs and 1/2 cup tomato sauce. Stuff in peppers.
Arrange in 9 x 13-inch baking dish.
Top with remaining tomato sauce.
Microwave 12 minutes.
Rearrange peppers once during cooking.
Serves 4.
